HEALTHY BANANA PANCAKES

I can’t decide if I’m a pancake or a waffle person, but something I know for sure…. These pancakes are heaven!! And healthy, and delicious and have great texture.

This recipe serves 2. I made it like this because both me and Gordon love it and when I make them he wants some too LOL. I came up with it when we were in Florida this past December and we didn’t have a waffle maker, so I had to come up with something for our breakfasts.

We eat these with any nut butter (although, my favorite way to eat them is with peanut butter), and I also add a little bit of sugar free maple syrup.

So, without further ado. Here’s the healthy banana pancake recipe:

Here’s what you’ll need:

3/4 cup quick rolled oats

28 grams coconut flour

14 grams ground flax seeds

1 tbsp ground cinnamon

2 tsp vanilla

1 tsp stevia

1 large banana (126 grams aprox)

1 egg

3/4 cup egg whites

3 oz coconut almond milk

Mix everything together in a blender for 2 minutes and let it rest for a couple minutes.

When making the pancakes make sure to use a non stick pan and use some spray oil. I cook them at medium heat for around 2 minutes on each side. I recommend you to make them small, so they are easier to manipulate.

Nutritional info: (per serving) – Remember it serves 2.

Calories: 382 – Carbs: 50.1 grams – Fat: 10.7 grams – Protein: 21.1 grams

I’ve never tried to reheat these, but I’m sure they would be fine. Maybe you can try to make a whole bunch once a week and reheat them in the microwave every morning.
