Ok, so… It’s pretty obvious I love sweet potatoes right? It’s just that they are so good!
Sweet potatoes are one of the best carbs you can include in your diet because they are packed with vitamins and fiber and are so so delicious. They are also super versatile.
I’ve shared my Sweet Potato Waffle recipe in the past, and even though the pancake recipe is super similar, I had to make a few changes because the texture just wasn’t right.
So, after trying a few different things, I finally have the recipe for these delicious, healthy and nutritious Sweet Potato Pancakes!!!
This recipe serves two. I love to eat them with almond or peanut butter and a little bit of sugar free maple syrup.
Here’s what you’ll need:
1 cup egg whites
1 large egg
1 tsp stevia (you cad add more if you like them sweet)
133 grams (1 cup) of cooked skinless sweet potatoes (I boil them, but I think you can bake them too)
1 tbs cinnamon
2 tsp vanilla
1/2 cup coconut-almond milk (or any nut milk)
1/4 cup coconut flour
1 tbs ground flax seeds
1/4 cup quaker oats
Mix in a blender for about 1 minute. Spray some coconut oil on a non-stick skillet and start making your pancakes. I cook them on medium heat for about 3-4 minutes on one side and for about 2 minutes on the other one. I’m not really sure on how much time exactly because I don’t measure it, but it’s not hard at all to tell when you should flip them. The whole mix makes like 10 or 12 small pancakes. (I eat 5 LOL)
